Summer Burger Bowls

Burger Bowls are one of my all time favorite recipes in the summer and something that I make regularly! They are quick, easy, and perfect for busy weeknights. They can be served over a bed of lettuce or, my favorite, in a butter lettuce bun! Feel free to use a good quality sourdough bun as well.

More reasons why I love this meal? It provides a great balance of macro nutrients from quality protein, healthy fats, and nourishing carbohydrates. Balanced meals are at the foundation of health hormones and metabolic health.

Ingredients

2 large white or orange sweet potatoes
2 - 3 tbsp coconut oil, melted
1 lb grass fed ground beef
1 red or yellow onion, sliced
4 roma tomatoes, sliced
1/2 Avocado Oil Mayo
2 tbsp organic ketchup
1 tbsp coconut aminos
Organic Butter Lettuce, Spring Mix, or Sourdough Buns
pickles (minimal added ingredients from the refrigerated section)
organic, raw cheese, optional

Directions

  1. Preheat the oven to 425 F. Cut potatoes into "fries" and toss with 2 tbsp melted coconut oil. Arranges the fries on a baking sheet lined with parchment paper ensuring that they do not overlap each other. Season with sea salt. Bake fries for 30-35 minutes or until they are starting to brown but are not burnt.

  2. Meanwhile, melt the remaining 1 tbsp coconut oil in a skillet over medium heat. Add onion and slowly sauté for 20 minutes, stirring occasionally. The onions should be dark and caramelized when done.

  3. Form ground beef into 3-4 patties. Heat your grill to medium high heat. Once hot, grill for 4 minutes on each side or until desired doneness.

  4. In a small bowl, mix together mayo, ketchup, aminos, and 2 tbsp of diced pickles. Add a splash of Sriracha or hot sauce if you like it spicy!

  5. To assemble, place lettuce in a bowl or plate. Top with a burger, tomatoes, onions, and a drizzle of burger sauce. Top with a sprinkle of cheese if desired.
